    Chocolate Cake and Conversation

    January 15, In memory of Mother whose birthday was today

    Skiffs of snow covered Marcy’s drive. She happened to be gazing out the window of her cozy little cabin where a quiet burning of Pecan wood in the fireplace made everything radiate
    warmth. With a slow deliberate step an older gentleman plodded up the drive toward her. He wore a heavy leather coat with a fur collar with a battered Stetson hat on his head which marked him as an aging cowboy. The way he deliberately walked directly through and over the snow somehow was registering a memory within her mind.

    “Mam?” this man with weathered skin of the outdoor man spoke to her. “I know you probably don’t remember me. You were a child when I worked on your Dad’s ranch. Thet war a fur time back!”

    It must have been his heavy Oklahoma colloquial speech to have made her recognize him.

    “Charley? Is it you? Is it really you?” Marcy was suddenly transported to another place when this man was youthful and robust. He held his same quizzical half smile and even though his hair was totally gray, striking blue eyes still had a touch of a glint in them to make a person believe he knew some great secret that might be shared if someone simply took the time to stop and chat with him for a minute or two.

    Charley rested easily at the table of her kitchen as they almost spoke reverently of the days when she was a child. She cut him a big slice of the chocolate cake still warm from the baking of it that morning. He was at home again it seemed. It was such a pleasure to see him drink from his coffee cup while holding the spoon to one side without removing it as the cowboys always did.

    “Wall now, wouldn’t yew know it? This here is the recipe from the chocolate box your Mother used to make, and ain’t it delicious?”

    Charley left as quietly as he came, politely excusing himself as he had done when he left the hired hands table off the back of the kitchen at the ranch.

    Marcy knew this was most probably his good-bye to her while he “picked up his tracks” as the Indian say folks do before they go.

    This is the recipe for the Chocolate Cake off of the Cocoa Box Charley so enjoyed.

    Chocolate Cake
    2 cups sugar
    1 3//4 C. Flour
    3/4 C Cocoa
    1 ˝ t baking powder
    1 ˝ t. soda
    2 eggs
    1 cup milk
    ˝ Cup vegetable oil
    2 t. vanilla

    Cream sugar and oil together in a mixer. Cream 2 eggs into this.
    You have already mixed together the flour, baking powder, soda and cocoa. Alternately add to this the 1 cup milk, 1 cup boiling water,
    2 teaspoons vanilla and beat until well mixed

    Frosting

    1 stick butter
    2/3 cup cocoa
    3 teaspoons powdered sugar
    1/3 teaspoon milk
    1 tsp. Vanilla

    Melt butter, Stir in cocoa. Alternately add powdered sugar and milk beating to spreading consistency. Stir in small amount additional milk if needed. Stir in vanilla. Make 2 cups frosting.
